Way Up North, Cured Salmon

Curing - an ancient preservation method

Pick the middle piece of a salmon & be generous with dill
Ingredients; 1 part salt, 1/2 part sugar, crushed white peppercorns & dill

Mix all, pat mixture into salmon & let rest in fridge for at least 2 days



Roll It Up, Sponge Cake

Sponge cake turns into Swiss roll

Ingredients batter; 3 eggs, 1/2 cup sugar, 1 cup flour, 1 tsp baking powder, vanilla- & cardamom powder, 1 tbsp water & almond flakes

Beat the eggs with sugar, mix flour, baking powder, vanilla- & cardamom powder & blend into a batter

Spread the batter onto a cooking sheet clad baking tray, top with almond flakes, bake in oven at 470 degrees F & sprinkle with sugar once baked
Season ripened apples become puree

Ingredients; apples, cane sugar, water, vanilla- & cardamom powder & sea salt

Peel & cut apples into peices, add additional ingredients, bring to the boil & simmer
Roll that sponge cake
Swiss roll with apple puree, vanilla cream & toasted almonds

Ring My Bell, Bell Pepper

Filled bell pepper - by itself or as trimming
Bell pepper - a natural container
Take out seeds & precook in oven

Ingredients filling; risoni/quinoa/rice/bulghur, vegetable stock, olive oil, garlic, yellow onion, white wine/cooking wine, gorgonzola cheese, nutmeg, paprika powder, white pepper & salt

Cook risoni, quinoa, rice or bulghur al dente in vegetable stock

Sauté yellow onion & garlic with thyme in olive oil, add white wine/cooking wine & simmer

Mix all, add gorgonzola cheese, nutmeg, paprika powder, white pepper & salt

Fill bell peppers with mixture & cook in oven

Fill Up, Corn Tortilla Taco

Tacos everywhere

Heat taco shells in oven, fill with mince mixture, top with grated cheese & brown

Ingredients mince mixture; olive oil, garlic, yellow onion, mince, jalapeno, tomato- & chipotle paste, red wine/cooking wine, stock, balsamico, soy sauce, cumin- & coriander powder, cayenne pepper & salt
Fill heated taco shells with ingredients to your liking - perhaps like here with corn, lettuce, red onion, salsa & fresh coriander

Butter Up, Butternut

Soothing butternut squash soup
Ingredients; olive oil, butternut squash, sweet potato, carrot, potato, yellow onion, garlic, thyme, bay leaf, white wine/cooking wine, vegetable stock, cream, white pepper & sea salt
The smell of comforting earthy sweetness

Peel & cut root vegetables into pieces

Roast with olive oil, whole cloves of garlic, bay leaf & thyme in 430 degrees F
Butternut squash soup catches the colors of autumn

Cook the roasted root vegetables  herbs with white wine/cooking wine, vegetable stock & cream

Mix into a smooth creamy soup & season with white peppar & sea salt
